Apple Butter Cookies

Picture
Creates 3 dozen cookies
Ingredients
  • 1/2 stick (1/4 cup) unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 egg
  • 1 1/4 cup unbleached all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/3 cup grandulated sugar
  • 1/2 teaspoon salt
  • 2 tablespoons milk
  • 1/2 cup apple butter

Directions
  1.  Cream butter and sugar. Beat in egg and apple butter. Combine dry ingredients in small bowl, gradually add to creamed mixture along with the milk. Beat until blended. Cover and refrigerate for at least 1 hour or till easy to handle.
  2. Preheat oven to 350.  Drop by teaspoonfuls(I use cookie scoop) 2 inches apart onto parchement paper lined baking sheet or lightly greased one. Bake for 15 minutes or until you can see that edges are slightly browned.
  3. Place on wire racks and let cool 2 minutes before removing cookies* from pans to wire rack to cool completely or eat warm.
*If not cooked long enough then they will stick to parchement. Cookies to have a slight tacky feel to them but should be too much.
*While first batch cooked I did place remaining dough in fridge so it didn't warm up so much.
