Cherry Bread

Creates 1 loaf
Ingredients 
  • 1 3/4 cups all purpose flour + dusting for cherries
  • 1 1/2 teaspoons baking powder
  • 2/3 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup maraschino cherries
  • 1/2 cup cherry juice (add water or milk needed)
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 2 eggs, lightly beaten
Directions
  1. Preheat oven to 350°F. Grease 9" loaf pan* lightly with butter
  2. Chop cherries and lightly coat with flour. Set aside. 
  3. Put dry ingredients in large bowl, whisk. In a small bowl, add all wet ingredients, whisk. Add wet ingredients to dry mix together, once almost incorporated, add cherries. Don't over mix. Batter is on the thick side. 
  4. Add batter to pan and bake 45-60 minutes. Toothpick should come out clean or with just a little crumb. Immediately remove from pan to wire rack cool. ​
*Cast iron gives the best bake I have found.

Banana Bread

Ingredients
  • 1 3/4 cups all purpose flour 
  • 2/3 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup (1 stick) butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 egg, lightly beaten
  • 3 ripe bananas, mashed.
Directions
  1. Preheat oven to 350°F. Spray 9"x5" loaf pan* with nonstick vegetable spray with flour. You can just grease and flour the pan also. Set aside.
  2. Combine all dry ingredients in a large bowl and whisk together. In a medium bowl mix all wet ingredients together. Make a well in dry mixture to add wet mixture. Mix till just combined, don't over mix.  Pour into loaf pan.
  3. Bake for 55-60 minutes till tooth pick comes out clean. Let cool in pan on wire rack for 10 minutes and then remove from pan. Can be served warm or completely cooled. 
*I prefer to use cast iron loaf pan because it cooks more evenly and makes a nice crust. 
*Can use mini loaf pans also but check them after baking for 30 minutes.
