Preheat oven to 350°F. Spray 9"x5" loaf pan* with nonstick vegetable spray with flour. You can just grease and flour the pan also. Set aside.
Combine all dry ingredients in a large bowl and whisk together. In a medium bowl mix all wet ingredients together. Make a well in dry mixture to add wet mixture. Mix till just combined, don't over mix. Pour into loaf pan.
Bake for 55-60 minutes till tooth pick comes out clean. Let cool in pan on wire rack for 10 minutes and then remove from pan. Can be served warm or completely cooled.
*I prefer to use cast iron loaf pan because it cooks more evenly and makes a nice crust. *Can use mini loaf pans also but check them after baking for 30 minutes.
