1 3/4 cups all purpose flour + dusting for cherries
1 1/2 teaspoons baking powder
2/3 cup granulated sugar
1/2 teaspoon salt
1/2 cup maraschino cherries
1/2 cup cherry juice (add water or milk needed)
1/2 cup (1 stick) unsalted butter, melted
1/2 teaspoon vanilla extract
2 eggs, lightly beaten
Preheat oven to 350°F. Grease 9" loaf pan* lightly with butter
Chop cherries and lightly coat with flour. Set aside.
Put dry ingredients in large bowl, whisk. In a small bowl, add all wet ingredients, whisk. Add wet ingredients to dry mix together, once almost incorporated, add cherries. Don't over mix. Batter is on the thick side.
Add batter to pan and bake 45-60 minutes. Toothpick should come out clean or with just a little crumb. Immediately remove from pan to wire rack cool.
